Aside from sushi and pasta, Mexican food is one of my absolute favourites. I was so excited this week when I found Yorkshire Farms ground chicken on special at the grocery store. This local company has amazing organic chicken and this was my first time trying the ground chicken in particular. I was having a huge craving for Mexican food that day and decided to have some fun making a totally gluten and grain-free burrito. I started making collard greens wraps a couple of months ago as an alternative to wheat and corn wraps. They are packed full of nutrients, especially vitamins K, A, C, folate, calcium, manganese and fibre. I have to say if you like the taste of these greens (they are quite bitter), then you will be sure to enjoy this simple and fun dinner recipe!
Ingredients
3 quarters of red pepper – chopped
1 to 2 carrots – chopped
1 small zucchini – chopped
1/2 of an onion (I used a white cooking onion) – chopped
3 cloves garlic – minced
1 pound ground chicken (organic or local if possible)
Salt and pepper – to preferred taste
Red chilli peppers – to preferred taste
Cumin – to preferred taste
2 tbs of coconut oil
4 pieces of washed collard greens
1 avocado – finely sliced
Mozzarella cheese (organic if possible) – grated
Directions
- In a medium sized skillet heat coconut oil to a sizzle on high
- Add in the garlic and onions and mix until the garlic begins to brown
- Turn the temperature down to medium, then add in the ground chicken and mix together until the chicken is almost fully cooked
- Add in the peppers, carrots and zucchini
- Mix everything together for a few minutes – if you feel the pan is getting dry you can add in a bit of cold water to keep things moist
- Once things have been cooking for a few minutes you are going to add in all of your spices – if you are a fan of cilantro now would be a good time to add it in
- Let everything cook on medium heat for another 10-15 minutes or until the vegetables have reached your desired consistency
- Once everything is cooked you will begin to assemble your burrito
- The first step is to carefully slice down the thick stalk of the collard greens to make it more flexible (this is the thick part towards the bottom of the greens)
- You will then place two pieces of collard greens beside each other head to foot so that they are overlapping
- From here you are going to pile on your ingredients and fold the collard greens the way that you would a regular wrap and enjoy!!!
